No one can truly know, weather they truly believe or not is different. Everyone must have doubts due to lack of evidence, therefore to say 'I don't know and no one does' is the most honest answer. Faith doesn't come in to it.
few atheists say God definitely doesn't exist. they simply say it is not necessary based on the evidence and there is no reason to include a God when nothing seems to hint at his existence.
I don't see that being any less truthful than "I don't know" which is technically a truthful answer to anything assuming you truly don't know.
honesty is not the same as truth. any answer as long as you truly believe in it is honest.
claiming you know the answers is arrogant and following someone who claims to know the answers is sheepish.
since it cannot be proven either way, saying you know what the answer is seems foolish to me.
