I agree with you now although I think scientists and doctors have a chance of figuring out how to efficiently change someone's sex organs while maintaining their function which is why I make the distinction. I also compare it to hair dye. If a person dyes their hair purple you'd say they have purple hair. Even though they have to constantly redye their hair to make it appear permanent. Its not the best comparison but to me it shows how you would describe someone using their gender and not sex. Like if you saw Blaire White walking down the street you'd probably use female pronouns.
I said it is not a physical characteristics, and I don't see how sex can change after birth. sex change surgery is cosmetic, like amputation or prosthesis. it doesnt change what you are. and hormone replacement isnt permanent. so sex seems pretty set from birth to death.
Let me say this though. There are three main genders male, female, and nonBInary. So yes there are two genders in the sense that all the other genders either exist in between the male female spectrum or exist outside of it when someone doesn't feel like either.
Also XX and XY only determine sex at birth.
Well gender isn't necessarily a physical characteristic so we disagree on the definition.

as far as humans go, can you name any of these alternative genders? because if you look them up they will be terms like androgenous which clearly describe personality and not an actual physical characteristic.
gender is how you Express yourself on the masculine to feminine spectrum. prince and freddy mercury are both extremely feminine even tho they are clearly men.
androgenous people, for example, act and dress in gender neutral ways which make it difficult to tell what they are, but they are still their sex and can be either gay or straight. they just don't act like the societal gender norm.
as for the definition of sex, very easy: XX, XY. except for rare, mostly sickly mutations.

Well my definition as a biologist for sex is the function of an organisms reproductive organs. Gender is how it expresses itself. Express not in the way we usually think about it. For example make cuttlefish will express themselves as female and trick other males into mating with their females. When they do this their gender changes because they are expressing as female rather than make but their sex is the same because well the function of their organs remained the same. In this sense gender becomes a spectrum between the two points of male and female. So technically their are infinite genders although like there are technically infinite colors between blue and red we still name colors like purple and lavender.

There are organisms with a distinct third gender as well.... and you didn't specify that it's only humans.... we aren't the only animals buddy
so this is factually wrong twice over. We have 2 distinct biological sexes (male and female) and then we have an infinite number of genders. Gender and sex are not synonymous nor interchangeable.
